The Huila region in Colombia is nestled between two Andean mountain ranges. ABOUT THE PROCESSING
Ethyl acetate is a naturally occurring ester used to bond and remove caffeine from green coffee. The coffee is sorted and steamed for 30 minutes to open the bean pores and prepare them for caffeine removal. It is then placed in a solution of water and ethyl acetate, where the E.A. acid begins to bond with the chlorogenic acid salts inside the seeds. The container is emptied and refilled until caffeine is no longer detected. The seeds are steamed again to remove traces of ethyl acetate, then dried.
