It’s not every day you encounter coffee that feels like an experiment. Even rarer is the case when such an experiment ends in success. In the cup, we sense juicy wild strawberry, subtly exotic pitaya, and elegant floral notes. Drinking it is truly delightful.
ABOUT THE FARM AND PROCESSING
In 2019, the Silva family planted the Batian variety at Finca La Siberia – a coffee tree developed in Kenya, known for its resilience and high cup quality. El Salvador is not its natural home, but that makes the whole story even more interesting. It turns out that volcanic soils, cool climate, and high altitude reveal the truly impressive potential of this variety. The farm's name also has character. The founders decided that this place reminds them of... Siberia. This happened because of the cool mornings, high elevation, and rugged terrain. It’s hard to argue with them – the coffee clearly thrives in such conditions. The berries ripen slowly, accumulating a higher concentration of sugars, and then undergo a double anaerobic fermentation process. It sounds like the name of a progressive metal band, but practically it means a double controlled anaerobic fermentation that gives the coffee even more depth, intensity, and complexity. The result? A coffee that proves sometimes it's worth taking risks. Batian has found a second home in El Salvador, and we are delighted to have found a place for it in our roastery.
