This coffee should be approached with a bit of caution. While it may not get you on your feet, it is a precise fruit bomb. Caffeine-free coffee has long held its place on our shelves and in our hearts, but this one quickly turned our habits upside down. From the very first sip, it felt juicy straight to the taste buds. Is it really caffeine-free coffee? So fruity? So expressive? We couldn't pass it by indifferently and resisted the temptation to share what the famous Nogales farm does with caffeine-free coffee. Nogales is a family farm currently run by Oscar Hernandez, a third-generation farmer from Huila who has been breaking coffee traditions for many years, a mindset backed by the "Cup of Excellence" award won in 2006.

For the sensory description, we limited ourselves to three descriptors, although the truth is that almost the entire Mamba type flavor palette could easily fit into the profile. The flavor is complex and intense, hard to confuse with anything else. Bright sweetness is complemented by well-balanced acidity and a round body. If you love fruity profiles, want to avoid caffeine and are reluctant to give it up, these beans are just for you.

The processing begins in the classic way. Manual harvesting, flotation to separate only ripe berries, followed by 24 hours of fermentation and thorough washing. The coffee is then gently dried on raised beds until it reaches the desired moisture level.

Only then does caffeine removal begin. First, the beans are submerged in 40 °C hot water for four hours to extract the caffeine. This step is repeated twice. Then, natural misa is used – an extract obtained from the coffee berry's peel and pulp. The entire process is based solely on components derived from the coffee itself. Finally, the beans are washed again and dried, preserving the coffee's clarity in the cup and natural sweetness.
