ABOUT THE FARM
Finca El Cedro is a 2-hectare farm run by Henry Munoz and Monika Berdugo. The plantation is a legacy left by Henry's father. The current owner passionately continues the family tradition of cultivating various botanical coffee varieties.
Here’s how Henry described this particular harvest: “We handpick only the ripe coffee cherries. Then the coffee is washed and left with the cherries in bags for two days. Afterwards, the coffee is pulped and left in bags in a mucilage state for two days. Then the coffee is washed again and transported to the drying location. During the day, the coffee is stirred several times to dry as quickly as possible. The drying process takes 20 to 25 days, depending on the climatic conditions. After drying, the coffee is packed into bags and allowed to stabilize before samples are submitted.”
Store in a dry and cool place.
