The character is mainly defined by the use of the Taiwan "Hong Yu #18" variety, known as "Ruby," discovered in 1999. This tea is produced in very small quantities and harvested twice a year – in spring and winter.

Brewing Instructions:
European style:
5 g of tea / 250 ml of water / 95 °C temperature.
First infusion: 2 min. / Second infusion: 3 min. / Third infusion: 5 min.
Gongfu style:
4 g of tea / 100 ml of water / 95 °C temperature.
First infusion: 20 s. / Second infusion: 10 s. / Third infusion: 15 s. / Fourth infusion: 20 s. / each subsequent infusion – a little longer
Cold Brew: 10 g of tea / 1000 ml of cold water. Keep in the refrigerator for 12 hours and stir well.
