Well balanced traditional chef's knife. Razor sharp, high carbon MAC knife steel. The blade hardness is optimal, RC 57-61º, which makes re-sharpening easy. The blade is bevelled on both sides and is sharpened on both sides to a slightly asymmetric MAC angle, which optimizes knife control when slicing.
Do not dishwasher safe or cut hard materials such as ice or bone.
