A widely used carbon steel pan even has the baking properties of a cast iron pan and the non-stickiness of a Teflon pan! In addition, you can also use metal tools with the pan.

De Buyer Carbone Plus is a completely identical frying pan to the Mineral B frying pan - the only differences are the lack of beeswax treatment in Cabone Plus and a more oven-resistant, reinforced cast iron handle. Carbon steel is not as porous as cast iron, so you can fry all the raw materials in it without any worries. In raw materials with a high protein content, such as egg or white fish, it is important to be careful and lower the temperature considerably. It is not advisable to try to keep carbon steel the color of clear steel, but it changes color in use. The inside of the pan darkens and when the inside is completely black, its natural non-stick surface is at its best.

The carbon steel pan must not be washed in the dishwasher, washing by hand usually requires only hot water. Also, food cannot be stored in a carbon steel pan or left in the sink due to rust. However, if surface rust appears in the pan, it is not unusable and the rust can be removed with, for example, a coarse sponge or steel wool. It is also advisable to apply a drop of rapeseed oil to the pan after use, washing and drying to prevent surface rust from forming during storage.
